Easy Baked Halibut

I started writing a weekly blog for Beaver Creek Cabins & Guide Service in 2007. Surprisingly, I haven’t experienced writers block very often. This week, however, I was close to saying I got nothing…That changed when Jane prepared a delicious fish dinner Friday night.

Hard to believe, but in fifteen years this is the first recipe that I’ve posted. Depending on the feedback I receive, this could be the first and the last recipe that I share. Then again, if it’s a hit, I have plenty of other recipes for preparing fish of all kinds.

Even though this recipe from savoryexperiments.com is called Easy Baked Halibut, any white meat fish such as cod, rockfish, or walleye can be substituted. The prep time for this recipe is 15 minutes, and the cook time is 30 minutes. It will serve 4.

INGREDIENTS

  • 24 ounces of halibut, cut into 4 fillets
  • cooking spray
  • 2 tablespoons fresh lemon juice
  • coarse salt and pepper
  • 1/2 teaspoon lemon zest
  • 3 tablespoons fresh dill, chopped
  • 3 scallions, thinly sliced
  • 1/2 cup tomatoes, seeded and chopped
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/2 cup orange bell pepper, diced
  • 1/2 cup dry white wine
  • 1/2 cup parmesan cheese, finely grated
ready to go into the oven

INSTRUCTIONS

  1. Heat oven to 400F and coat a baking dish with cooking spray.
  2. Rinse the fish and pat dry. Place the fish in the baking dish.
  3. Pour the lemon juice over fillets and then season liberally with the salt, pepper, lemon zest, and dill.
  4. Layer the scallions, tomatoes, and bell peppers on top of the fish. Pour white wine in the bottom of the dish (not over the fish).
  5. Cover with aluminum foil and allow to sit for 5 minutes before placing in the oven covered for 10 minutes. Remove aluminum foil and place back in the oven for 5 minutes or until fillets flake with a fork.
  6. Sprinkle parmesan cheese over fish and return to oven until melted. Allow to rest for 2-3 minutes before serving.

Before Jane found this recipe, I would say 95% of the time I would deep fry halibut. It’s excellent deep fried. However, a change of pace, and a healthier alternative has now made this baked creation one of my favorite ways to eat halibut. Give it a try next time.
